No Maida, No Sugar, No Eggs, No Butter Cake
Ingredients
Dry Ingredients
Whole wheat flour --------- 2 Cups
Baking powder ----------------- 1-1/2 tsp
Baking soda -------------------- 1/2 tsp
Salt ------------------------------- 1/8 tsp
Cinnamon powder ------------ 1 tsp
Cardamom powder ------- 1/2 tsp
Wet Ingredients
Curd --------------------------- 3/4 cup
Refined oil ------------------- 1/2 cup
Hot milk ---------------------- 1 cup
Dates ------------------------- 2 cup
Jaggery powder ----------- 1/2 cup
Vanilla extract -------------- 1 tsp
Milk --------------------------- 1/2 cup
Walnuts --------------------- 1/2 cup
Dates ------------------------ 5 chopped
Almond -------------------- 1/3 cup chopped
For the Topping 1 tbsp of sliced almond &1 tbsp of chopped walnuts.
Preparation
Step 1. In a bowl take 1 cup of hot milk and 2 cups of dates, soak for 30 min., after 30 min. Blend it and make a smooth paste.
Step 2. Preheat the oven to 350 Fahrenheit (180 degree Celsius), grease your cake tin with ghee and set aside.
Step 3. In a bowl, sieve together the flour, baking powder, baking soda, salt, cardamom powder and cinnamon powder and set aside.
Step 4. In large bowl, using a hand whisk or electric whisk, add dates paste, curd, refined oil, jaggrey, vanilla extract, 1/2 cup of milk and mix well.
Step 5. Add the dry ingredients and whisk until mixed properly. Now add chopped dates and nuts, mix it well.
Step 6. Pour the batter in the prepared cake tin uniformly, now sprinkle the almond sliced and chopped walnuts.
Step 7. Bake for about 25 to 30 minutes at 180 degree temperature or until fully baked, allow it to cool for 10-15 minutes in the pan, before removing it from the pan and placing it on a wire rack to cool completely.
Note*
- If you don't have jaggery powder, don't worry, take normal jaggery cubes or blocks and grate it. I did the same.
- To test if the cakes are done, insert a toothpick in the center of the cake.
