Sitaphal (Custard apple) Basundi

Custard apples, also known as Sitaphal in Hindi, Seetha Palam in Telugu, Seetha Pazham  in Tamil, Sita Pazham in Malayalam and Sharifa in Punjabi.

Custard apples are rich in anti-oxidants like vitamin C and vitamin B6. It is also rich in calcium, copper, magnesium, iron, niacin, potassium and dietary fibre, which helps assist digestion.


Ingredients 

 Milk ----------------------- 1 liter
Custard Apple ------------ 2 large
Sugar --------------------- 1/2 cup
Cardamom ---------------- 2 to 3
Pistachio ------------------ 10 to 15
Almond ------------------- 5 to 6
Saffron ------------------- 4 to 5 thread (optional) 

 Let's start 

Step 1. Heat the milk in a heavy bottom pan. once it comes to a boils, add saffron. Reduce heat. 


Step 2. Keep stirring continuously, till it reduces to half. 


 Step 3. Meanwhile deseed the sitaphal and keep the pulp aside, till needed. 

 Step 4. Add sugar and stir till it dissolves. Add cardamom powder, mix it well and switch off the flame. 

 Step 5. Now mash the deseeded sitaphal pulp with fork and add to the reduced milk and mix it well. Let it cool completely. Garnish with pistachio and Almond. 

Serve chilled!!

Paneer is loaded with healthy fats, proteins and very low in carbs.  Making Paneer (cottage cheese) at home is very easy. I always make Paneer at  home. Here is the step by step method to make Paneer. Ingredients Full fat milk ------ 2 liters Alum(fitkari)/   Lemon juice /  Vinegar /   Curd 1/4 cup   whatever available in the kitchen. Let's make Paneer Step 1.  Pour milk to a heavy bottom pot and bring it to a boil on a medium flame. Stir occasionally to ensure the milk doesn't get burnt at the bottom. Step 2.   Meanwhile spread fresh handkerchief or muslin cloth over the strainer. Place this over a large bowl to hold the things.    During festive season we have lots of left-over sweets. We can use them to make Rabri or Kulfi. I tried for the first time and the result was amazing. Both Rabri and Kulfi were heavenly. It hardly took 10 to 15 minutes.  Ingredients  Kaju Barfi ------------- 10-12 C ondensed milk ------ 1/2 cup Green cardamom ---- 4-5 (in powder form) Almonds -------------- 15 Milk ------------------- 1 liter (full cream) Let's start Step 1.   Grind the Kaju Barfi and make coarse powder, keep it aside.    Step 2. Heat the milk on low flame for at least 18-20 minutes, let milk reduce. Step 3. Now add condensed milk and mix it well. Step 4. After 1 to 2 minutes, add grinded Kaju Barfi, keep stirring so that no lumps are formed. Step 5. Add almonds and cardamom powder, stir it for a minute on a low flame. Switch off the flame.   Step 6.
