Methi malai paneer

Ingredients 

 Cumin seeds --------------- 1 tsp
Bay leaf -------------------- 1
Cloves -------------- ------- 2
Cardamom pods ----------- 2
Pepper corn ---------------- 5 to 6
Asafoetida ----------------- 1/4 tsp
Cinnamon stick ------------ 1 inch
Ginger-garlic paste -------- 1 tbsp
Kashmiri chili powder ----- 1/2 tsp
Green chili ----------------- 2 slit
Coriander powder --------- 1 tsp
Turmeric powder ---------- 1/4 tsp
Tomato --------------------- 2 large
Kasuri Methi --------------- 1 tsp
Fresh cream --------------- 1/4 cup
Paneer --------------------- 15 to 20 cubes
Garam masala ------------ 1/4 tsp
Oil ------------------------- 3 tbsp oil
Salt to taste --------------- :)
Hand full Coriander leaves 
Water as required
Methi leaves / fenugreek leaves, washed and finely chopped. 
Let's start 

 Step 1. Heat oil and add asafoetida , cumin seed, bay leaf, cloves, cardamom and cinnamon stick. Then add finely chopped onions and saute for couple of minutes.

Step 2. Now add tomato puree, ginger garlic paste, green chili, salt, kasuri methi and all the spices.
 

Step 3. Saute for couple of minutes and cover with the lid, allow to cook. 


Step 4. Saute till the masala start to release oil.

Step 5. Now add fresh cream and mix it well, make sure the flame is low.
                     
 Step 6.  Add Methi leaves, saute for a minute.
    
Step 7. Add little bit of water and cook it for couple of minutes.

Step 8.  Now add paneer cubes and give a gentle mix.

Step 9. Add chopped Coriander leaves, mix well.

Step 10. Additionally add garam masala and kasuri methi, cover and simmer for 2 minutes.


Serve hot with paratha, and enjoy!!

Homemade Paneer (Cottage Cheese)

Paneer is loaded with healthy fats, proteins and very low in carbs.  Making Paneer (cottage cheese) at home is very easy. I always make Paneer at  home. Here is the step by step method to make Paneer. Ingredients Full fat milk ------ 2 liters Alum(fitkari)/   Lemon juice /  Vinegar /   Curd 1/4 cup   whatever available in the kitchen. Let's make Paneer Step 1.  Pour milk to a heavy bottom pot and bring it to a boil on a medium flame. Stir occasionally to ensure the milk doesn't get burnt at the bottom. Step 2.   Meanwhile spread fresh handkerchief or muslin cloth over the strainer. Place this over a large bowl to hold the things. For hygiene purpose, use unused cloths. .                                I am using Alum to curdle the milk.                      Step 3.  When the milk comes to boil, turn the heat low and wait for 5 minutes. Kulfi & Rabri from Leftover Sweets

   During festive season we have lots of left-over sweets. We can use them to make Rabri or Kulfi. I tried for the first time and the result was amazing. Both Rabri and Kulfi were heavenly. It hardly took 10 to 15 minutes.  Ingredients  Kaju Barfi ------------- 10-12 C ondensed milk ------ 1/2 cup Green cardamom ---- 4-5 (in powder form) Almonds -------------- 15 Milk ------------------- 1 liter (full cream) Let's start Step 1.   Grind the Kaju Barfi and make coarse powder, keep it aside.    Step 2. Heat the milk on low flame for at least 18-20 minutes, let milk reduce. Step 3. Now add condensed milk and mix it well. Step 4. After 1 to 2 minutes, add grinded Kaju Barfi, keep stirring so that no lumps are formed. Step 5. Add almonds and cardamom powder, stir it for a minute on a low flame. Switch off the flame.   Step 6.
