Sabudana Khichdi

Sabudana is rich source of Vitamin B6, great source of Protein, high in Calcium, Magnesium, Iron which help to make bones stronger and very low in Cholesterol, it is Gluten-Free and Non-Allergic, so anybody can have.    It is Prefect dish for "fasting" Ingredient  Sabudana ------------------- 1 cup Potatoes medium ----------- 2 boiled  Peanuts --------------------- 1 cup Curry leaves ---------------- 7 to 8 Ginger ---------------------- 1/2 inch Green chili ------------------ 2 to 3 Cumin seeds ---------------- 1 tsp Lemon juice ----------------- 1 tbsp Ghee / oil ------------------- 2 tbsp Sugar ----------------------- 1 tsp Coriander leaves as required  Salt to taste ---------------- :)   Let's Start Step 1. Lahsuni Baingan

Ingredients Baby eggplants ----------- 6 Coriander powder --------1 tbls Turmeric powder -------- 1/2 tsp Cumin powder ---------- 1/2 tsp Kitchen king masala ---- 1/2 tsp Besan ---------------------1 tbls Salt -----------------------1/2 tsp Panch phoron ------------1/2tsp Garlic -------------------- 4 cloves Mustard oil -------------- 3 tbls Dry mango powder ----- 1 tsp Hing(Asafoetida) -------- pinch of  Oil ------------------------ 3 to 4 tbs Let's start Step 1.  Take washed baby eggplants stalk trimmed and partially slit into quarters.  Step 2. In a bowl p ut the coriander powder, turmeric powder, kitchen king, cumin powder, salt and mix it well. Step 3.  Fill the slit eggplants with the mixed spices. Keep it aside. Step 4.   Heat the oil in a pan (on medium flame). Add Hing (asafoetida),  Panch phoron.  Cook till spluttering stops. Moong Dal Kheer

Very easy and heavenly in taste, high in fiber and protein Moong dal Kheer. Ingredients Moong dal ------------ 1/2 cup Full fat milk ---------- 1 liter Ghee ----------------- 1 tbsp Almonds ------------- 5-6 (dry roasted) Pistachios ------------ 4-5 (blanched) Cashew -------------- 4-5 (dry roasted)  Saffron --------------- 3-4  Condensed milk ----- 1/4 cup Green Cardamom --- 3-4 (powder)    Let's start Step 1.  Roast moong daal in ghee, nicely on a medium to low flame, until it changes to golden brown and have nice aroma.  Step 2.   Heat the milk, once it come to boil. Keep it heating on low flame for another 5-7 minutes till it becomes thicker.  Step 3.  Add the roasted moong dal to the milk. Step 4. Kulfi & Rabri from Leftover Sweets

   During festive season we have lots of left-over sweets. We can use them to make Rabri or Kulfi. I tried for the first time and the result was amazing. Both Rabri and Kulfi were heavenly. It hardly took 10 to 15 minutes.  Ingredients  Kaju Barfi ------------- 10-12 C ondensed milk ------ 1/2 cup Green cardamom ---- 4-5 (in powder form) Almonds -------------- 15 Milk ------------------- 1 liter (full cream) Let's start Step 1.   Grind the Kaju Barfi and make coarse powder, keep it aside.    Step 2. Heat the milk on low flame for at least 18-20 minutes, let milk reduce. Step 3. Now add condensed milk and mix it well. Step 4. After 1 to 2 minutes, add grinded Kaju Barfi, keep stirring so that no lumps are formed. Step 5. Add almonds and cardamom powder, stir it for a minute on a low flame. Switch off the flame.   Step 6. Besan ka Halwa

The most loved traditional Indian dessert, easy to cook  recipe,  u sually made during festive season, can also be an dessert made at home . Ingredients :- Besan (Gram Flour) ----- 1/2 Cup   Ghee --------------------  1/2 Cup Sugar -------------------  1/3 Cup   Water -------------------  1 1/2 Cups Sooji (Semolina) -------  1 1/2 Tbsp   Almonds ----------------  5 to 6    Green cardamom -------  3 to 4    Let's start Step 1.   Take a  pan and heat it on medium flame. Add 1 table spoon of ghee and heat it for a minute.
