Moong Dal Kheer

Very easy and heavenly in taste, high in fiber and protein Moong dal Kheer.

Moong dal ------------ 1/2 cup
Full fat milk ---------- 1 liter
Ghee ----------------- 1 tbsp
Almonds ------------- 5-6 (dry roasted)
Pistachios ------------ 4-5 (blanched)
Cashew -------------- 4-5 (dry roasted) 
Saffron --------------- 3-4 
Condensed milk ----- 1/4 cup
Green Cardamom --- 3-4 (powder) 

 Let's start

Step 1.  Roast moong daal in ghee, nicely on a medium to low flame, until it changes to golden brown and have nice aroma. 

Step 2.  Heat the milk, once it come to boil. Keep it heating on low flame for another 5-7 minutes till it becomes thicker. 

Step 3. Add the roasted moong dal to the milk.

Step 4. Cook it in the milk for around 10-15 minutes, till it is properly cooked.

Step 5. When milk will becomes thicker and moong dal is cooked nicely, add a pinch of saffron, it adds nice flavor and color. 

Step 6. Check the moong dal by pressing it, it should still be slightly firm, the reason is because it's roasted. The crispness adds to the texture. It should not be mushy. 

Step 7. Add condensed milk and mix it well. Add some dry roasted almonds, cashew and blanched pistachios.

Step 8. Cook for another minute. 

Step 9. Add green cardamom powder. 

Step 10. Turn off the heat, let it cool down. Garnish with dry roasted nuts.  

Serve chilled!!!

Note*  Kesar is optional. adjust the sweet as per your taste.
