Sabudana Khichdi

Sabudana is rich source of Vitamin B6, great source of Protein, high in Calcium, Magnesium, Iron which help to make bones stronger and very low in Cholesterol, it is Gluten-Free and Non-Allergic, so anybody can have. 
 It is Prefect dish for "fasting"


Ingredient 

Sabudana ------------------- 1 cup
Potatoes medium ----------- 2 boiled 
Peanuts --------------------- 1 cup
Curry leaves ---------------- 7 to 8
Ginger ---------------------- 1/2 inch
Green chili ------------------ 2 to 3
Cumin seeds ---------------- 1 tsp
Lemon juice ----------------- 1 tbsp
Ghee / oil ------------------- 2 tbsp
Sugar ----------------------- 1 tsp
Coriander leaves as required 
Salt to taste ---------------- :)


 Let's Start

Step 1. Rinse Sabudana well in water and soak it overnight or at least for 4 to 5 hours.

Step 2.  Take a pan, dry roast the peanuts and let it cool, make coarse powder of it.

Step 3. Mix the coarsely powdered peanuts, salt, sugar with soaked sabudana.

Step 4. Take a pan, heat the ghee and add cumin, fry till they crackle.

Step 5. Now add Curry leaves and green chilies, fry for another few seconds, then add grated ginger.

Step 6. Saute for a couple of seconds then add chopped boiled potatoes and stir for another minute.

Step 7. Add sabudana, keep stirring on a low flame for 4 to 5 minutes.

Step 8. Do not overcook as they might become sticky.

Step 9. Turn off the heat, add lemon juice and coriander leaves, mix it well.

Step 10. Serve hot !!


Note *    
  • For soaking 1 cup of Sabudana I used  1/2 cup of water. (overnight)
  • Sugar is optional. 
  • During Fasting you may use rock salt (sendha namak).
