Makhane ki Kheer


Fox nuts are high in fiber, they are high in magnesium and potassium and low in sodium. Fox nuts are great anti-ageing food as they have abundance of anti-oxidants.



Ingredients

Makhana(fox nut) ------------ 2 cup
Full fat milk ------------------ 1/2 liter
Almond ----------------------- 5 to 6
Pistachio --------------------- 5 to 6
Green cardamom ------------ 3
Sugar as per taste ----------- :)


Let's start

Step 1. Heat the pan and dry roast the fox nuts (Makhana), roast it well. Let it cool.

Step 2. Pour milk to a pot and bring it to boil on a medium flame. Stir occasionally to ensure the milk doesn't get burnt at the bottom.

Step 3. In a grinder grind 1 cup of the dry roasted Makhana. Make a fine powder.

Step 4. Crush another cup of dry roasted Makhana with mortal pestles or rolling pin. Do not make powder of it, jusr break them into a small pieces.

Step 5. In a bowl take Makhana powder and add some cold milk and mix it well, make a lump free paste.

Step 6. Now add the Makhana paste into the boiling milk, mix it well and make sure no lumps are formed. 

Step 7. Now add the crushed Makhana, mix it well. Cook for another 5 to 6 minutes.

Step 8. Add sugar, almonds and green cardamom powder. stir occasionally.

Step 9. When milk thickens a little, turn off the heat.

Step 10. Garnish with almond and pistachio. 


Serve chilled !!




Note *   
  • Makhana ki Kheer taste better with low sugar. 
  • Crushed Makhana is optional. Crushed Makhana add nice texture and powder thickens the milk. You can have all powder or all crushed Makhana, if you like it that way.
